I am guessing that the hot weather here in Pennsylvania where I live is probably going to continue on for at least the next six weeks or so. I love summer so that doesn’t bother me but what does become difficult as August turns into September is the ability to prepare food without heating up the house. A hot house in the Summer, I cannot stand. One way to keep the heat to a minimum is to prepare meals that I can make larger batches of and then just tweak the ingredients so that I have a few different ways to serve them. Storing each recipe in a different container for the week also helps. Let me show ya how with my Cobb Salad!

Isn’t she lovely?  Ever since my daughter Elizabeth was a little baby she has had a recurring problem with Eczema that shows up each year on different parts of her body.  It starts out like a small rash and ends up being a bleeding sore that eventually spreads, scabs over and looks and feels uncomfortable.  I have always felt so bad about it and gave spent a lot of time looking for different ways to deal with it.
